INGREDIENTS:

Any combination of dried fruits can be used and the coating can be varied, too.

75g stoned dates

75g dried apricots (no sulphur dioxide)

50g chopped or ground almonds, or dessicated coconut

2 tablespoons pure apple, or other, juice, to bind (could use water)

2 tablespoons cocoa powder (or a measure to suit your chocolatey tastes!)

 

METHOD:

Blend the dried fruit with the juice until smooth.

Add the chopped or ground nuts and cocoa powder, and mix thoroughly.

Form into small balls.  It all gets very sticky at this point - you'll need to wash your hands often!

Roll the balls in more cocoa powder, more chopped almonds, or dessicated coconut.

Keep the balls in the fridge (if they get that far...) - they're even more delicious chilled.
